The Olive is the antique, constant wealth of our Agricultural Business: for this reason the plants are pruned in alternate years, allowing a year to rest. The olives are harvested by hand or with the nets  and taken to be pressed within 24 hours from the harvest. In this way we grow and harvest our olives to produce our oil, particular, selected, fine quality, produced in small quantity and directly marketed.

 In the property of “Speziale” in Fasano the cultivation of Leccina and Coratina give birth to this delicate oil, scented by the special fragrance of the green olives. It’s the gourmet quality oil used for raw and fried dishes.

The cultivation of Oliarola and Cellina of Nardò of the possession situated in Pascarosa and “Angelo di Maglie” – at 350 metres above sea level- give birth to an oil with a delicate fragrance and subtle herbaceous inkling, of a high quality and for a daily use.
